Tom Yum Fried Rice

What you need

cup mushroom

onion

lemongrass

clove garlic

lb chicken thigh

cup rice

tbsp yellow curry paste

tbsp sugar
Instructions
0 Clean and cut the chicken into bite sized pieces and prep the veggies. 2 Remove the outer layer of lemon grass. Cut it into half and cut off the end. You can discard the upper part. Slice the lemon grass into small pieces. 4 Heat up oil in a medium sized pan. 6 Add the onion, garlic, and lemongrass. Fry until fragrant or about a minute/two. 8 Optional: Remove the lemongrass. 10 Add the chicken and cook until it’s almost cooked. 12 Add the veggies and lightly fry for a few more minutes. 14 Once the veggies are almost cooked, add the tom yum paste and mix well for one or two minutes. 16 Add rice and season with sugar. 18 Stir the mixture in the pan together and mix well. 20 Serve while hot and enjoy!View original recipe
