What you need

tsp water
tsp cornstarch

tsp lemon juice

tsp fish sauce

tsp sugar

cup orange oil
Instructions
0 In a bowl, add all the ingredients listed except for the oil-- adjust to taste. Whisk/beat the eggs until well combined. 1 In a pot or wok, heat up the oil over medium heat. Once oil is hot enough, carefully pour in the egg from about one foot above the pot or wok into the oil in one go. You can either make small gentle circles at the center of the surface of the eggs for 5-10 seconds to spread the egg mixture or just leave it alone. Give it some time for the eggs to puff up. 2 Once the underside has turned golden brown, flip the omelette over carefully with two spatulas and let it cook until the bottom is golden brown. 3 Transfer the omelette to a paper towel to drain off excess oil or serve immediately with white rice.
