Menemen (Turkish Scrambled Eggs With Tomatoes and Pepper)

This easy Turkish Menemen is of creamy scrambled eggs cooked with tomatoes and green pepper. A simple and comforting one-pan breakfast that can also be enjoyed as a light lunch or dinner.
Crack the eggs in a bowl and beat it. Set aside for later.
In a pan over medium heat, melt butter with a little bit of oil. Once hot enough, add the diced pepper and a ¼ tsp of salt. Cook for 3-4 minutes.
Add the diced tomatoes, ¼ tsp of salt and ½ tsp of aleppo pepper powder. Stir and turn the heat down to medium low. Cover with a lid and cook for 3-4 minutes.
Remove the lid and add the rest of the salt, minced garlic, sugar, aleppo pepper powder and 1 tsp of the minced parsley. Stir and add the beaten egg.
Swirl the pan around so the egg will spread around. Let it cook for 1-2 minutes before stirring (see notes).
Garnish with the remaining fresh parsley and serve with bread or flatbread. Enjoy!
