Beef Pepper Rice (Pepper Lunch)

Try this easy 20-minute Beef Pepper Rice dish inspired by the Japanese steak fast food restaurant, Pepper Lunch. With a delicious honey garlic sauce that you can add as much as you want to. A flavorful dish that's great for a quick lunch or weeknight dinner.
Sauce
Mix the ingredients for the sauce in a bowl and set aside for later. Add the cooked rice to a small bowl so it's easy to flip into the skillet. Prepare all the other ingredients beforehand for easy cooking.
In a cast iron skillet over medium low heat, add 1 tbsp of neutral oil. Once it's heated up, add sliced onions and sauté for 1-2 minutes.
Gather the onion at the center in the shape of a circle for the rice. Flip the bowl of rice on top of the bed of onions. Add the thinly sliced beef around the rice and pour the sauce all over the rice. Add the salted butter on top of the rice, followed by the corn and the green onions.
Once you're ready, turn the heat up to medium and mix it all up until well combined and the beef is cooked. Add the poached egg on top and enjoy!
