Easy Thai Basil Fried Rice

Make your own takeout dish at home with this easy Thai basil fried rice with chicken! Rice fried with marinated chicken, chilies, garlic, and basil, together with a delicious savory sauce.
Chicken Marinade
Seasoning sauce
To a bowl, marinate diced chicken with oyster sauce and white pepper. Let it marinate for at least 10 minutes.
In a different bowl, make the sauce by mixing oyster sauce, fish sauce, light soy sauce and palm sugar. Mix well and set aside for later.
Mash sliced chili peppers/jalapeno and garlic cloves into a rough paste by using a mortar and pestle. If you don't like it spicy, you can't skip this step and just use minced garlic (see notes).
To a wok or a pan, add about 1-2 tbsp of neutral oil and heat it up over medium heat. Once it's hot, add sliced onions and sauté for 1-2 minutes. Then add the marinated chicken and cook until it's fully cooked.
Add cooked rice and break up any clumps. Season with the sauce that was pre-made earlier and add half of the basil leaves. Mix well. Taste for seasoning and adjust accordingly to taste. Towards the end, add the remaining basil leaves and mix for another minute before turning off heat.
Serve while hot with lime wedges. Enjoy! :)
