Char Kuey Teow. You can make this delicious hawker food easily at home! Smoky and charred stir-fried flat rice noodles with cockles, bean sprouts, and garlic chives.

Preparation
In a bowl, combine all the ingredients for the sauce and set aside. Rinse the cockles/shrimp and set aside.
Cut the chives into the same length as the bean sprouts and soak both in a bowl of water. Do not drain.
Fresh rice noodles are best for this. If yours stick together, heat it up in the microwave at 30 seconds interval. Once it's warm and soft enough, gently separate the noodles.
Prepare the rest of the ingredients near the wok before cooking (see notes).
Cooking (see notes before starting)
In a wok over high heat, add 2 tbsp of oil. Once it's hot, add the minced garlic and sauté for 10-15 seconds and add chili paste/sriracha if using and stir.
Immediately add in the cockles or shrimp and sauté for another 15-20 seconds then add bean sprouts and chives immediately from the bowl of water. Sauté for another 15-20 seconds.
Add noodles and the sauce. Stir until everything is well combined. Push the noodles to the side and crack an egg. Scramble the egg and let it set before mixing it with the noodles.
Turn off heat and serve immediately. Optional but highly recommend serving with a side sambal. Enjoy!
