This easy Tomato Basil Cheese Pasta combines creamy cheese with fresh tomatoes and basil for a mouthwatering dish you'll love! Inspired by Sung Si Kyung's brie pasta that was viral in Korea.
Boil pasta in salted water per package instructions. Right before time is up, reserve 1 cup of pasta water and set aside for later.
Grate parmesan and cut softened cream cheese into small pieces. Slice cherry tomatoes into quarters.
Stack rinsed and dried basil leaves on top of one another and roll as tightly as you can. Slice thinly into ribbons.
Into a big bowl, add cream cheese and parmesan. Then add the freshly cooked pasta directly from the pot followed by the cherry tomatoes, basil and a splash of pasta water.
Mix the pasta until the cheese melts and becomes a creamy "sauce" and coats the pasta. If the sauce is too thick for your liking, add more pasta water.
Add chili oil to your taste and mix well (see notes). Serve and enjoy!
