Asian Cucumber Carrot Garlic Salad

Savory, tangy, and refreshing, this easy Asian Garlic Cucumber Carrot Salad is a delicious addition to your meal as an appetizer or side dish.
Salad Dressing
Cut Persian cucumbers to your preference. I sliced it 1 inch thick in a zig zag motion.
Add to a bowl/container and sprinkle 1/2 tsp of salt. Mix that well and refrigerate for at least 20 minutes to draw out the water.
In the meantime, peel off carrot skin and shred or make carrot ribbons with the peeler.
Once the 20 minutes are up, drain the cucumber water and give the cucumbers a quick 10-20 seconds rinse before returning back to the bowl/container.
Add both the cucumber and carrots to a bowl and add the rest of the ingredients. Adjust to taste. Mix well and serve immediately, but it's best to refrigerate for at least 20 minutes before serving. Enjoy!
