Easy Shrimp Omelet

Have a go at this delicious Easy Shrimp and Egg Omelet. A simple recipe with comforting flavors of the Chinese cuisine, and is more of an omelet style rather than scrambled.
Eggs
Season peeled and deveined shrimp with salt and pepper. Mix well and set aside.
Break the eggs into a bowl. Add green onions, sugar, pepper and light soy sauce. Beat the eggs until well combined.
In a pan over medium heat, melt butter in a little bit of oil. Add minced garlic and sauté for 1 minute.
Add shrimp and cook for 1-2 minutes on each side.
Pour in the eggs. Leave it alone and let it cook until the edges begin to set. Once it sets, gently swipe your spatula from the outside to the center. Keep doing this but from different angles until 95% of the egg is cooked. Turn off heat and cover with a lid for the egg to finish cooking with the residual heat.
Serve while hot with white rice. Enjoy!
