Indulge in the decadent deliciousness of Basque Burnt Cheesecake with this easy recipe! With just a handful of ingredients, you'll create a creamy, caramelized dessert that will have you wanting for more.
Preheat oven to 395 F and prepare all the ingredients.
To a blender, add softened cream cheese, sugar and eggs. Blend on low for 30 seconds or until it's mixed well.
Pour in heavy whipping cream, vanilla extract, lemon juice and add salt and sifted flour. Blend on low until well combined (30-60 seconds) but not for too long because you don't want to overmix it.
Line a round 6 inch cake pan with parchment paper and pour in the batter. Tap the batter a few times to even out the batter and to get rid of all the air bubbles.
Place the cake pan inside the oven and bake at 395 F for an hour.
If the top of your cake is still not evenly deep golden brown or looking "burnt", let it bake for another 2-3 minutes but keeping an eye on it so it doesn't overcook (see notes).
Carefully remove the cake from the oven, the center should still be wobbly. Let it cool for at least 2 hours before removing from the pan. At this point, the cake will have deflated and firmed up.
Peel off the parchment paper and serve at room temperature. Enjoy!
