In a big bowl, mix tom yum paste, hot water and sugar until well combined.
Add your chicken and mix well. Marinate in the fridge for a few hours or overnight.
After marinating, add flour and cornstarch to the bowl. Mix well until every piece of chicken is well coated.
Deep fry the chicken on medium low heat until golden brown and fully cooked (see notes). Place on a cooling rack to drain excess oil. Optional: double fry for extra crispiness!
