Try out these delicious oven Garlic Butter Roasted Potatoes! Soft and fluffy on the inside, while crispy and golden on the outside. Infused with an aromatic mix of garlic butter.
Garlic Butter
Preheat oven to 400 F and bring a pot of water to a boil. In the meantime, cut the rinsed and cleaned baby potatoes into half or quarters if they're bigger.
Once the water starts boiling, add the potatoes and let it cook until fork tender (10-15 minutes). Once it's done, drain and shake off excess water. Return the potatoes to the pot.
To the pot, add neutral oil, salt, onion powder and cajun seasoning. Gently toss the potatoes to coat with the oil and seasoning.
To a baking tray, add a bit of oil to coat the surface. Transfer the potatoes to the tray and make sure the potatoes are facing down.
Place the potatoes in the preheated oven for 25 minutes. Remove then toss/turn the potatoes and place back in the oven for another 15 minutes or until golden brown and crispy.
Garlic Butter
While the potatoes are cooking, melt the butter and oil in a pan over medium heat.
Add the minced garlic and let it cook for 3-4 minutes-- stirring often and careful not to burn the garlic. You want to cook it until right before it turns golden brown.
Turn heat off and add the seasonings immediately and stir until well combined.
To serve
You can either toss the roasted potatoes in the garlic butter and serve or serve the roasted potatoes and drizzle the garlic butter on top. Garnish with dried or fresh minced parsley. Enjoy!
