Burrata Bruschetta With Tomatoes

These Burrata Bruschetta With Tomatoes are so simple to make! A great appetizer option for dinner parties, game nights, or even a party of one.
Preparation
Take burrata out of the fridge to get it to room temperature.
Slice the baguette in half lengthwise. Drizzle olive oil all over the exposed area of the bread. Drizzle olive oil to a pan over medium heat and add the baguette. Press down to toast evenly. Toast on both sides until golden brown.
Slice the grape tomatoes into quarters. Take a few basil leaves and stack it together. Roll the leaves together tightly and slice the leaves as thinly as possible. Add everything to a bowl and season with salt and pepper. Add balsamic vinegar, olive oil and toss to mix well.
To assemble
If using roasted garlic, mash and spread a few cloves on top of the toasted baguette. If using a fresh garlic clove, rub the garlic on the toasted baguette.
Place the burrata on top of the baguette and spread it all over. Add the tomato basil mix on top. Optional: Drizzle a bit of the liquid from the tomato basil mixture on top. Garnish with fresh basil leaves on top. Enjoy!
