Boil dried instant noodles according to packet instructions with the dried vegetables. Reserve the spice packet for later. Drain the noodles and set aside.
In a bowl, add half of the seasoning packet, minced garlic, the white parts of the green onion, sugar and chili flakes.
Heat up 3 tbsp of neutral oil over high heat until it starts to smoke (1 minute), turn off heat and immediately pour the oil into the bowl. Mix it well then add the cooked noodles, rice vinegar and the rest of the green onions. Mix the noodles until well combined.
Heat up a frying pan over medium high heat with the remaining oil. Once the oil is hot enough (15 to 30 seconds), gently break an egg and let it cook until the edges turn golden and crispy and the yolk has reached your preferred doneness. Serve with the noodles and enjoy!
